Easiest first:
Grass is green, because it contains chlorophyll; the compound in plant cells that through photosynthesis forms sugar from carbon dioxide and water; with the help of sunlight as a source of energy.
The sky is blue; because when sunlight strikes the molecules in the atmosphere, they 'scatter' the blue light. What this means is that they absorb the shorter wavelength blue part of the spectrum of sunlight; but let the red and yellow part pass through. The molecules then 're-emit' the blue light again. The blue light then gets bounced around from molecule to molecule in this way, and to us looking up from the ground; when the blue light eventually reaches us, it therefore seems to be coming from everywhere. This process is called 'Rayleigh scattering'.
The sky is blue because as the light from the sun goes through the atmosphere it is scattered by the molecules of the air. That scattering process is called Rayleigh scattering and is about 9 times more intense at blue wavelengths that at red wavelengths. The result of that scattering is that the sky appears blue and the sun appears more yellow than it really is. Grass and most other plants are green because of the chlorophyll content of their leaves. The particular process of photosynthesis utilized by chlorophyll probably derives from the fact that the maximum output of the sun is at a wavelength of 550 nm - which is green.
Clouds are white because the very small water condensations centers are sub micron in size. Light scattering from sub-micron particles are wavelength independent (therefor the cloud appears white). Also, the light from a sub-micron particle scatters in all directions so the clouds appear white at all angles.

The sky's color is caused by light refraction. Solid objects colors appear as such because the spectrum of color is absorbed minus the wavelengths of color that you see reflected. Why? Because God created it that way. He's a great artist.
